2022 CFP Wings (Thai Chili)

  • GO DAWGS. Going into the game I was nervous about UGA because TCU looked so damn good in the semi-final. That was quickly erased by the spanking The Dawgs put on The Frogs. The over hit too.

    BUT WHAT REALLY HIT WERE THESE WINGS. I think I ate 15 of them. No Shame. Eat like a champion.

    The secret ingredient to good wings is a coating but not too much of it. Potato starch is what you’re looking for. Go to H\*Mart and buy it. I used way too much in my version, but the recipe should reflect a better amount to use. Like these things were damn General Tso’s type fried chicken. Read that again. I UNLOCKED GENERAL TSOS IN THE HOME wild.

    Anyways - I cheated on the sauce because Melinda’s is the best and I got a fresh bottle from Buc-Ee’s. Super Bowl I’ll make my own sauce.

    • 2.5 lbs “Party Wings” or full wings you butcher yourself

    • A VAT of Peanut oil

    • 1 tbsp Lawry’s Seasoned Salt

    • 1/3 cup Potato Starch

    • 3/4 cup Melinda’s Thai Chili Sauce

    1. Butcher your wings if you need to.

    2. In a ziplock bag put all your wings and the LAWRY’S. Shake it up to coat.

    3. Let those joints sit and marinate in the LAWRY’S. Meanwhile, heat your oil in a dutch over. get it up to 400 because the wings are you going to suck up all the heat.

    4. Add potato starch to the bag, toss to coat again. Make sure it gets distributed well.

    5. Fry in batches until golden brown. Like 12.58 minutes.

    6. Put the wings on a wire rack between batches.

    7. Make sure the oil gets back up to temp before you do the next batch.

    8. PUT ALL THE WINGS BACK IN THE POOL for the last batch. This is not really optional. Double frying wings is a MAJOR KEY DJ Khaled Voice.

    9. Remove after another 8-10 minutes and go right to a bowl with your sauce and toss.

    10. Serve with your favorite accoutrements and eat like a savage.
