Shredded Chicken Burrito Bowls

  • The debate over Qdoba and Chipotle only has one correct answer, and that’s to just make it at home. In other words, spends $50 on ingredients and several hours of your day to make something that you might spend $16 on.

    It is about the process, my dudes. Expanding your minds and your skillset so you’re ready for what comes next. Basically if you can manage to properly time like 7 different components to all finish at the same time it’s equivalent to finishing a jigsaw puzzle on your beach vacation. GRATIFYING.

    Anyways, this is like my 10th post, and I’m already unhappy with the layout that I created so there’s that. Cooking is easier than blogging. Maybe that’s why all the recipes I always found on the internet were crap. They were better at SEO. give me back links, PLEASE!

  • Rice

    • 1 cup Jasmine Rice

    • 1 tsp Vegetable Oil

    • ⅓ Cup Chopped Cilantro

    • Pinch Kosher Salt

      Salsa

    • 23.5 Oz Canned Crushed Tomatoes

    • ½ White Onion

    • 2 Chipotles in Adobo

    • 1 Jalepeno

    • ½ cup Cilantro

    • ½ lime - juiced

    • 4 cloves Garlic

      Guacamole

    • 1 Avocado

    • ½ Red Onion

    • ½ Jalepeno, seeded

    • 2 cloves Garlic

    • ⅛ cup Cilantro

    • ¼ tsp cumin

      Chicken

    • 2 bone-on chicken breast

    • 3 dried Ancho Chilies

    • 3 dried Pasilla Chilies

    • 2 chipotles in adobo

    • 4 clove Garlic

    • ½ tbsp Onion powder

    • 1 tbsp Mexican Oregano

      Sour Cream Sauce

    • Sour Cream

    • Whole Milk

      Black Beans

    • ½ cup dried Black Beans

    • 1 bay leaf

    • Pinch Mexican oregano

    Rehydrate dried peppers in hot water. Enough just to cover. Steep 30 minutes

    Blend all the ingredients (except chicken)

    Sear chicken skin down in a pressure cooker.

    Add pepper sauce to browned chicken.

    Add more stock so chicken is just a bit more than half covered.

    Pressure Cook for 40 minutes

    Kill the heat. Let it cool a minute and then quick release the pressure.

    Remove the chicken from the pot (it should be basically falling apart)

    Remove and discard any bones and skin.

    Add back to the pot with the braising liquid and mix with a wooden spoon -- it should shred very easily.

    Salsa

    Blend garlic, onions, cilantro, and chilies.

    Add tomatoes. Pulse to combine.

    Refrigerate.

    Guac

    Use a molcajete to muddle onions, garlic, and cilantro

    Add avocado and mush/combine.

    Add lime juice and cumin.

    Black Beans

    Sidenote: Just use beans from a can. This is excessive.

    Add beans to a small saucepan with spices.

    Add 2 times as much water as beans.

    Cook for HOURS. Like the longer the better. Minimum 4 hours. Yea… use a can.

    Rice

    Steam rice as usual.

    Mix in other ingredients.

    Sourcream

    Dilute the sourcream with milk to make it more liquidy (why did even add this stuff … lol)
