The Stuff You Hate On A Stranger’s Food Blog

Having been disappointed by restaurant mango habanero wings that tasted like neither mango or habanero I took it upon myself to try to make some myself. I had frozen mango on hand from a recent smoothie stint. I had also made habanero pepper jelly last fall. To kick it up though I needed concentrated heat in the form of a habanero hot sauce I bought at the grocery store. Did it need butter? no. Did the butter take it to the next level? yes. The real star of the recipe is that black pepper. I don’t know why. I think it’s just goes with it being some kind of caribbean vibe - I might add allspice next time.


Ingredients

Sauce:

  • 1 cup Frozen Mango

  • 2 tbsp Salted Butter

  • 4 tbsp Habanero Hot Sauce

  • 2 tbsp Habenero Pepper Jelly

  • Hefty pinch black pepper.

Wings

  • 12 wing segments

  • 2 tbsp Potato Flour

 

Process

  1. Dredge wings in potato flour

  2. Make sauce - combine ingredients in small saucepan - add about 2 cups of water. bring to boil - blend with immersion blender. reduce - this should be done well ahead of frying wings.

  3. Twice fry wings - 350 for 8 minutes. Rest for 20 minutes. Fry at 385 for 5 minutes

  4. Toss in sauce and serve.
